Break out the turkey! Hold on- I mean the one that gobbles and has feathers not the one that comes in the bottle.  There is a lot of work that goes into a Thanksgiving meal and by the time you get finished you often are just thankful that it is over, but this little dish is easy and it was my most favorite growing up. For years we had that traditional cranberry ala can. You know that stuff you opened, sliced and put on a fancy little dish. I’m not condemning this cylindrical substance, I’m just saying let’s get festive with tart fresh cranberries blended with sweet marshmallows and a mellow tropical twist of pineapple. Serve as a side dish or even dessert with your feast.

Mama’s Cool Cranberry and Marshmallow Salad

Serves 10 - 12
Prep time 10 minutes
Cook time 7 hours
Total time 7 hours, 10 minutes

Ingredients

  • 4 cups fresh cranberries
  • 1 1/4 cups sugar
  • 1 cup heavy cream
  • 1 10 oz package mini marshmallows
  • 1 8 oz can crushed pineapple (drained)
  • 1 cup chopped pecans (optional)

Directions

1. In a food processor, coarsely grind the cranberries.
2. Mix in 1 cup of the sugar. Cover and place in the icebox for 6 hours or overnight.
3. In a large bowl, whip the cream with the 1/4 cup of remaining sugar until stiff.
4. Stir in the cranberries, marshmallow, pineapple, and pecans (optional).
5. Cover and place in the icebox for 1 hour or until chilled. Serve cool.

    Happy Thanksgiving to you and yours. We’re going to be trying out this recipe for sure.

    Holidays were always a special events around our house. Ever since mom passed away in 1993, we always try to have some of mom’s recipe’s on our tables.

    Mom is the one that I give credit to, for making all the Holidays so special.

    This is our most special event. Thanksgiving, and Christmas.
